THAI CHICKEN BURGERS



Burgers are so much better when they are home made. I mean it and you will also agree once you give these deliciously succulent meat patties a-go. Especially with kids around
and feeding them you have peace of mind as to what's in there. .. So let's bid goodbye to those junk food eateries and say hello to  these homemade thai chicken burgers! 


Oh yes, you may grill/ BBQ or pan fry these tasty patties. A sneaky way to grate veggies (like carrot, zucchini, celery etc) and you won't even taste it!



Be it a hectic week night or a relaxing weekend.. dinner will be done in less than 20 mins.. so here you go with the recipe. Before we start just a quick note, add chillies mindfully when making these for the kids, I  use baby spinach to give these burgers an extra dose of health, lettuce is fine too.   

To make Thai Chicken Burger Patties you will need :

500 grams Chicken mince (makes 4)
3 spring onions/ 1/2 onion finely chopped or a bit of both 
1/4 cup roughly chopped coriander leaves
2-3 cloves of garlic finely chopped
2-3 bird's eye chilli thinly sliced/(optional)..(you may remove seeds/deseed  if you do not want much heat)
1 tbspn sweet chilli sauce
juice of half a lemon,lime
1 tbspn sweet soya sauce/ kecap manis/ bbq sauce
1 tbsp fish sauce
11/2 tbspn light soya sauce
seasalt flakes/salt
freshly ground black pepper
chilli flakes
 


 
To assemble the burger you will need :

4 Burger buns cut into half
olive oil or butter/margarine
2-3 Tomatoes thickly sliced
Cucumber ribbons (you may peel and slice them in your salad slicer lengthways)

 

 
Extra sweet chilli sauce to serve
Mayonnaise /Aioli/ or Sour Cream to serve
Some leafy greens such as lettuce or baby spinach leaves to serve
 
METHOD:
 
Step 1: Mix all ingredients listed above to make burgers along with Chicken mince, and make 4 patties. Refrigerate covered with a cling wrap.
 
 
 
 
Step 2: Heat oil in a non-stick pan and pan fry the burgers on both sides for 5 mins until brown and cooked through.You may even use a char grilling pan or ribbed pan as in the picture.
 
 
 
Step 3: Remove burgers from the pan once done and cover with a foil and let rest.
 
 
Step 4: Now take each slice of the bun and grill them with some butter/margarine or olive oil. Sprinkle some chilli flakes if you like.
 
 
 
 
 Step 5: Lay one half of the bread slices on your work surface and spread some sour cream, mayonnaise or aioli.
 
Step 6: Start with a layer of leafy greens, 2 slices of tomatoes, chicken patties, cucumber ribbons and drizzle some sweet chilli sauce. Top with the other half of the bread slice.
 
 
 
 
 
 

If you are concerned about egg allergies, these burgers are egg free, and are perfect for lunch boxes with just a side of salad. Any left over meat mixture, you may refrigerate as is, or making patties to simply grill the next day.. the meat mixture is good to be used within a day or two. You may even store grilled patties in the refrigerator, just warm them in microwave for 30 secs or so and you are go to go.. life can't get better than this..lol.. however I personally prefer freshly grilled patties..
